THE PIZZA-MAKING PROFESSION
The role of Pizzaiolo is well paid and offers a high level of professional satisfaction, because it allows you to express your personal creativity. Excellent pizza preparation is a combination of learning trade secrets and historically tried and tested techniques, and requires not just practical ability, but also deep knowledge of the ingredients and the best way to prepare them.
There are plenty of schools and courses for Pizza-makers. Our aim has been to provide a course which will ensure aspiring Pizzaioli acquire an indispensable platform of knowledge.
We want to enable budding Pizza chefs to produce high-quality pizza in a skilled manner, and to provide a concrete opportunity to enter into the world of work via our internship programs within a Pizzaman group pizzeria.
PIZZAMAN – A SUCCESS STORY
Pizzaman opened its first pizzeria in Florence in December 2001, achieving success right from the start. We have been able to distill the essence of the typical Neapolitan Pizza and this is one of the reasons for our meteoric rise.
The “Pizzaman Method” is a combination of great passion, scrupulous attention to the selection of quality ingredients, and traditional wood-fired oven baking. This cooking method saturates the dough with the smell of wood and gives it the characteristic taste of pizza from long ago.
Today, PIZZAMAN is a well-established brand in Florence and the surrounding area. We have numerous pizzerias across the area and have become a reference point for pizza-making and more. We can boast several prizes for our work, and have been able stand out due to our many charitable initiatives, our continual innovation and our constant quest for quality.

At the end of the course, successful participants will receive:
PIZZA-MAKING DIPLOMA – HACCP CERTIFICATE
ORGANISATION OF COURSE
(MAX. 2 STUDENTS PER COURSE)
The courses last 80 hours + 12 hours dedicated to HACCP.
These hours are divided into theory lessons and practical sessions (in a pizzeria), as well as a meeting for the final exam and evaluation.
The internship, which will last minimum 1 month in a pizzeria, is included in the cost of the training. Among the topics dealt with on the course you will find: history of the pizza, raw materials, equipment, dough-making, elaboration and preparation, leavening, ovens and cooking, organising your work, health and safety regulations, economic factors.
Our courses are planned in the following times:
Choice of time between lunchtime or dinner time, or for those who work, Saturday and Sunday at lunchtime.
